Candied Yams

Candied Yams
Description:
5 lbs. Bright Harvest Center Cut Sweet Potatoes (#3853) – full bag
1/4 cup butter
1/2 cup packed brown sugar
salt and pepper to taste
2 cups miniature marshmallows
1/2 cup orange juice

Cut Sweet Potatoes into slices about 1/2 inch thick. In a greased 9" x 13" baking dish, arrange sweet potato slices , overlapping them as you go. Cut butter into small pieces. Sprinkle butter pieces and brown sugar evenly over sweet potatoes. Bake at 325º for about 25 minutes. Remove from oven. Uncover dish. Scatter marshmallows over sweet potatoes. Drizzle orange juice over top. Return dish to the oven and continue baking, basting occasionally, until marshmallows are melted and gooey, about 15 to 20 minutes. Makes 8 to 10 servings.
